Over on the Low Carb Zen page, stuffed pepper recipes are always wildly popular!  For good reason too!  They are super tasty, easily customized to your tastes, and not all that complicated.  I call that a win, for sure!  All of the recipes in this round-up are Atkins Induction Friendly, so if you’re just starting out, or jumping back on the induction train, add some of these to your meals to keep things interesting.

chorizo stuffed peppersIf you hang around me for a little bit, it is VERY apparent, I love cheese.  Like, I really really love the stuff, but alas… there are some of you guys out there that >gasp< don’t share my affinity, or sadly just can’t do cheese.  That’s okay.  I won’t judge you too harshly

Well, give Poblanos a chance!  They can pack a little bit of heat, but it’s a warmth, rather than fire, but if you tend to be extra sensitive, be forewarned that once in a rare while one of these will pick up some heat and surprise you with a nick kick to the back of the throat.  Been there… done that… I felt so betrayed!  Not that I don’t like a hot and spicy pepper, but I had never encountered a hot one before!  Anyway, Poblanos have an amazing unique flavor, and if you haven’t tried one yet, do make it a point to try it!

mexican stuffed peppersI call these my – I want Mexican take out so bad, but I know if I do I’ll fall face first into a pile of chips/beans/rice – peppers.  Most of the time, the will power is strong, but I know my weak spots and I don’t like to push my luck! So… there are these peppers to the rescue!
